Easy Green Salsa Recipe with Tomatillos and Avocado

I love, love salsa. My husband does too and we can easily go through a 16 oz. jar in 2 days.

What I love even MORE than jar salsa is homemade salsa. Yum!

I snagged this recipe from an old babysitter. When she would babysit my little munchkin she would always cook for our family and one of the things she made often for us was green salsa. She didn't have a recipe she followed, just made it by memory and eyeballed ingredients. And every time she created this delicious condiment I made sure to watch her so I could attempt to replicate it. Over the years I've perfected the recipe and wanted to share it!

•6-8 tomatillos, depending on size
•1 red tomato - roma or beefsteak
•1/2 large, yellow onion
•1/3-1 whole jalapeno - depending on personal spiciness preference
•1 avocado
•1/4 cup lemon juice
•1/2 tsp. sea salt
•1 tsp. minced garlic

Preheat oven to 400. Leaving them whole, place washed tomatillos, tomato, onion and jalapeno in a baking tray. Roast for 15 minutes. No need to spray with non-stick spray, as the vegetables won't stick.

Prepare blender by adding lemon juice, avocado, sea salt, and garlic.

When the vegetables are done roasting, add them to the blender and blend until smooth.

Enjoy with as a dip or on eggs, chicken, in a tortilla or lettuce wrap, on steak, a baked potato, whatever you can think of!
